PRODUCTION

Sorsi del Borgo
The Sorsi del Borgo label encompasses the full range of our wines made from grapes of indigenous, naturally grown grape varieties.
In our vineyards we grow grape varieties of:
Merlot, a black grape variety native to Gironde, in southwestern France, and in particular the Bordeaux area; it arrived in Italy in the late 1800s, in Friuli-Venezia Giulia, and then quickly spread to Veneto and Trentino-Alto Adige.
In the Veneto it found ideal environmental conditions with sometimes surprising results, even without the contribution of other grapes.
Garanega, the most important white grape variety in the provinces of Verona and Vicenza, and dominates the hills of DOC Soave and Gambellara.
Carmenere a black grape varietal of Bordeaux origin from the Medoc wine region.
Chardonnay is a white grape variety of French origin, originating in Burgundy, from where its finest and most famous wines come; in the Veneto region it is widespread, and from its grapes excellent high-quality wines are produced.

Olio del Borgo
Encapsulated in the Olio del Borgo label we find our oil produced by cold mechanical pressing from the fruit of our olive trees, a 10,000-square-meter, 250-plantation plantation cultivated with natural agronomic techniques and knowledge.
Cold Cuts and Sausages
Our pigs come from farms in Verona , brought to our farm as soon as they are weaned and fed with feed of controlled origin mixed with products from our growing chain.
From the slaughter, the meat is brought and processed at our farm, from which we obtain cold cuts and sausages, after a period of drying in special cells, they are put to seasoning.
Our cured meats and sausages do not contain dyes and additives, they are made only with the addition of salt and pepper.
The Garden
Our production of seasonal vegetables grown on open ground and a method of cultivation to safeguard the environment and the health of the consumer to obtain high-quality vegetable crops usable on the basis of the seasonal needs of one's body.

Cabernet Sauvignon is a decidedly exuberant grape variety with aromas of strong identity. On the nose it has characteristics reminiscent first of all of aromas of red and dark-fleshed fruits such as blueberry, black cherry, plum, blackberry and black currant, but also traces of underbrush such as musk.On the palate it is warm, broad and full-bodied; it enjoys excellent structure and the tannins wrap the mouth with mastery, thanks to the high amount of polyphenolic substances present in the skin.
It is advisable to serve CABERNET SAUVIGNON wine at a temperature between 18 and 20 degrees Celsius.
PAIRINGS: Mature cheeses and to aromatic meats, also excellent with truffles.

A wine with a deep ruby red color, with violet notes, and good texture.
On the nose, the wine from Carmenère presents fruity notes of cherry and blackberry, with more or less herbaceous nuances. Full-bodied, characterized by good acidity, sapidity and evident but not aggressive tannins, it leaves memories of jammy red fruit and spices, more or less intense depending on the vintage of production.It should be served at a temperature between 12 and 14 degrees Celsius.
